Three Amigos’ menu full of Mexican favorites
BARBOURSVILLE — With a background in the electrical wiring business, Jimmy Chapman seems like an unlikely restaurateur.
Yet Chapman’s first foray into the restaurant world has proven successful. In 2008 Chapman and his wife Rita acquired ownership of a Mexican restaurant, Three Amigos. The restaurant, formerly Porfirio’s, was renamed in honor of Jimmy and Rita’s three sons — Brad, Jimmy and Drew.
Upon taking over the restaurant, the Chapmans gave the restaurant an overhaul.
“We brought in a brand new menu, redid the carpet, fans and ceilings,” Chapman said. “We repainted it and put in the Three Amigos logo. We also had to put in new lighting. We also redid the menu.”
The small Barboursville restaurant known for its cantina bar and outdoor dining patio proved to be the winner of The Herald-Dispatch’s “Best of the Tri-State” winning the award for best Mexican restaurant. Chapman feels that quality customer service is what put them over the top with The Herald-Dispatch readers.
“Service is very, very important anywhere you go,” he said. “When you walk in you’re seated, given chips and salsa and they take your drink order. I think the servers take excellent care of our people.”
Chapman also takes pride in the quality of the restaurant‘s food.
“We buy fresh fruits and vegetables, and top-of-the-line beef,” he said. “The quality of our food is as good as anyone’s.”
The restaurant has an outdoor dining area which sometimes features live music. Music is usually booked at least once a week on either Wednesdays or Thursdays and once a month on Saturdays. Music usually goes from 7 p.m. to 10 p.m.
One of the signature items on the menu is the California Burrito ($9.99) which has grilled chicken or beef, rice, beans lettuce and pico de gallo with cheese. There’s also the Three Amigos Special ($13.99) featuring wings, cheese quesadillas, fajita chicken steak and shrimp served with queso dip. The restaurant’s most famous dessert is the Cinnamon Tostada Ice Cream ($5.95) topped with cinnamon, honey, chocolate chips, whipped cream, chocolate syrup and pecans.
A few regular customers have had their names added to specials on the menu such as Especial Carolos ($6.75) which is a garden salad with grilled chicken.
“We have what we think is the best margarita in the area,” Chapman said. “It’s called the Julio Special and it has seven different types of tequila in it. We even have ‘I survived the Julio’ T-shirts.”
Three Amigos is located at 3677 East U.S. 60 in Barboursville. It is open from 11 a.m. to 10 p.m. Monday through Thursday and 11 a.m. to 11 p.m. Friday.
