Lets Cook Local featuring Squash cooking class on Thursday

HUNTINGTON —  Love the idea of butternut (or any!) winter squash, but daunted by the process of cooking it? Never fear, it's easier than it seems. Lets Cook Local: Transforming Butternuts will focus on the simplicity of cooking a somewhat difficult seeming vegetable. The class will use a roasted winter squash to create a creamy pasta sauce, delicate bisque, and a super simple side dish.

The Wild Ramp-sponsored class is set for 6 to 8 p.m. Thursday, Sept. 12 at Creative Kitchens, 1242 5th Ave., Huntington. Cost is $30 or $25 for the Friends of the Market.

Winter squash can seem like too much trouble, with the tough outer skin, goopy interior seeds, and hard to cut flesh, but this fall market staple is well worth the effort! The class utilize a simple roasting technique to turn the stubborn squash into Creamy Butternut Pasta, Butternut Bisque, and two kinds of Simple Roasted Butternut Squash.

Join us at Creative Kitchens, as we wield our kitchen knives to tackle fall's most delicious vegetable! This class is meat, dairy, and egg free; two recipes are soy free.

The Class will be in a demonstration style, where the participants can taste the food as it is prepared and will receive a copy of all recipes. Jessica Long, class instructor is a knowledgeable vegan chef who has previously offered classes featuring, tofu, beans and tomatoes.
