Cooking class offered to demonstrate simplicity of cooking butternut squash

HUNTINGTON -- An upcoming cooking class, Lets Cook Local: Transforming Butternuts, will focus on the simplicity of cooking a somewhat difficult seeming vegetable.

The class will use a roasted winter squash to create a creamy pasta sauce, delicate bisque and a simple side dish.

The Wild Ramp-sponsored class is set for 6 to 8 p.m. Thursday, Sept. 12 at Creative Kitchens, 1242 5th Ave., Huntington. Cost is $30 or $25 for the Friends of the Market.

This class is meat, dairy and egg free; two recipes are soy free.

The class will be in a demonstration style, where the participants can taste the food as it is prepared and will receive a copy of all recipes. Jessica Long, class instructor is a knowledgeable vegan chef who has previously offered classes featuring, tofu, beans and tomatoes.
