River & Rail marks anniversary, adds sandwiches

HUNTINGTON -- The River & Rail Bakery in downtown Huntington celebrated its second anniversary on March 1.

Customers were given free breakfast cookies that day, but the small bakery/coffee shop has expanded its menu to include two soups, two salads and two sandwiches each day. In addition to serving up breads and pastries, River & Rail is now catering to the community's vegetarian and vegan customers.

"Our kitchen wasn't really set up for the lunch crowd, but we found that because this building used to be a restaurant we have a lot of people coming in looking for a restaurant," said owner Kim Baker. "We also found that a lot of our customers are on vegetarian and vegan diets. So we developed some vegan pastries, but we decided to offer soup. Our first was black been soup which was fairly popular. We started rotating the soups, and in the summertime we added salad. People were coming in and asking if we had sandwiches."

Every soup, salad and sandwich is available for less than $8, and customers are welcome to try combinations with a half portion of each. Sandwiches include a seitan sloppy joe, and a cheddar and apple panini. Soups can include black bean, Hungarian mushroom, roasted red pepper and tomato, and potato spinach soup. Salads will be based on seasonally available fruits and vegetables.

"Our first sandwich was a meatless sloppy joe made with seitan," Baker said. " We had to work on getting a panini that wasn't too hard. I personally don't like a panini that hurts my mouth when I eat it. So we had to find the right bread. I also made some spacers in the panini press to keep it from smashing everything down too much. I've come up with a panini that I'm happy with."

The River & Rail Bakery is open from 7:30 a.m. to 6 p.m. Tuesday through Friday and 8 a.m. to 4 p.m. Saturday. The Bakery also features an open mic performance from noon to 4 p.m. on Saturday. Cash and all major credit/debit cards are accepted.
