Black Beans, Grape Tomatoes and Lime

Enjoy this delicious salsa at your next barbecue. Recipe courtesy of the American Diabetes Association.

Serves 4; serving size: 1/2 cup

Ingredients

1 c. chopped onions

1 15-oz. can black beans, rinsed and drained

1/2 c. grape tomatoes, quartered

1 T. lime juice

1/2 to 1 tsp. ground cumin

1 T. extra virgin olive oil

2 T. chopped cilantro

Preparation

Place a large nonstick skillet over medium-high heat until hot. Coat skillet with cooking spray, add the onions, and coat with cooking spray. Cook onions 4 minutes or until beginning to brown, stirring frequently. Stir in the beans, tomatoes, lime juice, and cumin. Cook 1 minute or until heated through, stirring frequently. Remove from heat.

Season lightly with salt and pepper, if desired. Drizzle oil evenly over all, and sprinkle evenly with cilantro. Don't stir. Cover and let stand 5 minutes to absorb flavors.
