Fresh Parmesan gives hot artichoke dip a special flavor

Fresh Parmesan cheese gives this dip a special flavors. Recipe courtesy of the American Diabetes Association.

Serves: 32; Serving size: 2 T.

INGREDIENTS

2 15 oz. cans of artichoke hearts: canned, drained and chopped 2 garlic cloves, minced

1/3 c. olive oil

1/3 c. fresh lemon juice

1/4 tsp. hot pepper sauce

1/4 c. Parmesan cheese, grated

2 c. ground bread crumbs

1/2 tsp. dried oregano

1/2 tsp. dried basil

1/4 tsp. paprika

1/4 tsp. thyme

PREPARATION

Preheat the oven to 350°F.

In a blender or food processor, puree the first five ingredients for 30 seconds.

Pour the puree into a large bowl; stir in the cheese, bread crumbs, and herbs.

Transfer the mixture to a 1-quart baking dish.

Cover the dip and bake for 15 minutes or until lightly golden brown.

Serve warm with crackers or bread.
