Basil butter and sun-dried tomato sauce yummy treat

Serve this basil butter tomato sauce recipe from the Mayo Clinic over roasted chicken, veal or pork. Trans-free margarine can be substituted for butter to lower the amount of saturated fat in the sauce.

Serves 4


1 T. butter

1 T. all-purpose (plain) flour

1 c. unsalted chicken broth

1 T. finely chopped fresh basil or 1 tsp. dried basil

1 T. sun-dried tomato paste


In a small, heavy saucepan, melt the butter over low heat. Whisk in the flour and cook until the mixture is light tan, about two minutes. To avoid burning, stir the mixture continuously. Add the chicken broth and turn up the heat to medium, stirring until thickened, about five minutes. Stir in the basil and tomato paste. Reduce the heat to low and simmer for two minutes more. Serve warm.
