Sausage balls a Christmas tradition for one family

Tryna and Dan Fitzpatrick, of Hilton Head Island, S.C., shared this recipe for sausage balls. Tryna Bailey Fitzpatrick is originally from Logan, W.Va., and still has lots of family in Logan, Huntington and Charleston. Sausage balls are a Christmas tradition with the family. This year when everyone got together at the Fitzpatricks, they forgot to make the sausage balls ahead of time.

With grocery stores closed and the proper ingredients nowhere to be found, the family put together an alternate version that featured Italian sausage, beef jerky and Cheese Whiz, and well, it wasn't good. The family has laughed it off and chosen to share the good version with readers of The Herald-Dispatch.

Bailey Family Sausage Balls

Ingredients:

1 lb. sausage (Jimmy Dean sausage will work)

8 oz. stick sharp cheddar cheese

3 c. Bisquick

Instructions:

Mix and roll in small balls. With your hands, knead all the ingredients together in a bowl. This may take awhile to fully moisten the Bisquick and the cheese. You can add a little splash of milk to help moisten.

Form mixture into 1-inch balls and place on a baking pan. Bake at 350 degrees until brown, about 15-20 minutes.

After removing from oven, place on paper towel to drain. We like to put them in a slow cooker for serving. It not only keeps them warm but also moist.
