Stephanie Hill: Make Super Bowl Sunday, 'souper' with chili recipe
Are you planning on having a full house for the Super Bowl? Well, why not make it "Souper Sunday?" Here is a recipe for Three-Bean Turkey Chili I found and tested recently on my football-loving and discriminating taste-testers (and my husband and daughter), John and Maddie.
I fully embraced the fact that it was "souper-easy" and "souper-healthy," While John and Maddie loved the "souper taste!" Plus, we all enjoyed the aroma as it cooked throughout the day.
You could gather your ingredients and prepare your meat and veggies on Saturday. Then, when Sunday morning arrives, before you hustle off to church, simply dump all of your ingredients into your Crockpot and give it all a good stirring. Once you are home from Sunday morning worship services, you have the rest of the afternoon to take it easy with your family.
Now, that sounds like a "Souper Sunday" to me!
We served this chili with cheese tortilla roll-ups: Take your favorite style of tortilla. Fill each with your favorite type(s) of shredded cheese. Roll up your tortilla and place seam-side down on a baking sheet coated with nonstick cooking spray. Brush the tops of your cheese roll-ups with melted butter and pop them in a 350-degree oven for 10-15 minutes, or until tortillas begin to lightly brown and cheese is visibly melting. These roll-ups are wonderful dunked into the chili or even salsa!
Want a "souper simple" dip idea? Mix equal parts of sour cream with your favorite salsa. Or, dump your favorite type of refried beans (15-ounce can) into a pan and mix in one package of cream cheese until it is melted and well blended into the beans! Yum! And don't forget to double or triple amounts if you have a larger crowd.
Finally, one more idea: Again, using your favorite style of 15-ounce can of refried beans (we love black refried beans!), stir in a couple dollops of sour cream and few good spoonfuls of your favorite style salsa. Heat through until sour cream is melted and all ingredients are well mixed.
All of these dips are wonderful served with traditional tortilla chips or the cheese roll-ups described above.
Even if you do not choose to serve-up this "Souper Soup," I hope that you, your family and friends enjoy the Super Bowl as much as my family does!
THREE-BEAN TURKEY CHILI
1 pound lean ground turkey
1 cup chopped onion
1 cup chopped green pepper
1 cup chopped celery
2 cloves garlic
28-ounce can crushed tomatoes
15-ounce can chickpeas, rinsed and drained
15-ounce can dark kidney beans, rinsed and drained
15-ounce can black beans, rinsed and drained
15-ounce can tomato sauce
4-ounce can diced mild (or hot) green chilies
1 to 2 tablespoons chili powder
2 teaspoons cumin
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper (optional)
Cook turkey and veggies in medium nonstick skillet over medium-high heat until turkey is no longer pink and veggies are soft.
Drain and discard fat.
Transfer meat and veggies to crock-pot and add remaining ingredients.
Mix well.
Cover and cook on high 6 to 8 hours; or, on low 10 hours.
