Healthy barbecue adds lots of flavor

July 04, 2009 @ 11:25 PM

HUNTINGTON -- This recipe for healthy barbecue sauce comes from registered dietitian Dena McDowell, a nutritional expert for TOPS (Take Off Pounds Sensibly) Club.

This recipe reduces the amount of salt and sugar, especially in the form of high-fructose corn syrup, in barbecue sauce.

Ingredients:

1 cup low-sodium ketchup

2 teaspoons chili powder

1/2 cup onion, minced

1 tablespoon butter

1 tablespoon brown sugar (or use Splenda brown sugar to reduce the carbohydrate content)

1/2 teaspoon garlic powder.

Directions:

Saute onion with butter until tender. Mix all remaining ingredients with onion. Bring to a boil and simmer for 20 minutes. Add extra chili powder or Tabasco sauce to make a spicier version.

This recipe makes 11/2 cups.
