Get Healthy Tri-State: Breakfast burrito a quick morning fix
HUNTINGTON -- This quick and easy recipe for a breakfast burrito is healthy, too.
This recipe makes one serving, at 153 calories. It takes about 15 minutes to make.
Ingredients:
2 corn tortillas
1 tablespoon salsa
2 tablespoons shredded reduced-fat cheddar cheese
1/2 cup liquid egg substitute
Directions:
Top tortillas with salsa and cheese. Heat in the microwave until the cheese is melted, about 30 seconds.
Coat a small non-stick skillet with cooking spray. Heat over medium heat, add egg substitute and cook, stirring, until the eggs are cooked through, about 90 seconds. Divide the scrambled egg between the tacos.
This recipe also has 2 grams of fat, 3 milligrams of cholesterol, 15 grams of carbohydrate, 17 grams of protein, 0 grams of fiber, 453 milligrams of sodium and 207 milligrams of potassium.
