Culinary Institute announces May classes

HUNTINGTON -- The Cooking & Culinary Institute of the Marshall Community & Technical College, 917 3rd Ave., has announced its May class schedule:

May 8: A meal for a mother/daughter night out, table-side Caesar salad, pasta station and strawberry Kahlua sabayon; $40 (limited seating); 6-8 p.m.

May 17: Get ready for summer with Caribbean delights, made with fresh fruit and island delicacies; demo; $35; 1-3 p.m.

May 18: Learn to create a variety of dressings from scratch to dress your favorite salads. Create vinaigrettes, bleu cheese, and table-side Caesar; $25; 1-3 p.m.

May 21: Customers' favorite breads course; $30; 6-8 p.m.

May 22: Learn to bake, poach and fry your favorite type of fish; demo; $35; 6-8 p.m.

May 23: Date Night in New Orleans. A taste of Cajun and Creole dishes; $45; 6-8 p.m.

May 24: Cool down with a cold soup for a hot summer day; includes gazpacho, melon soup and vichyssoise; demo; $30; 1-3 p.m.

May 25: Learn to make creme anglaise, chocolate mousse, panna cotta and all your favorite fillings; $30; 1-3 p.m.

May 27: Sweet and savory phyllo recipes, including spinach & feta rolls, delicious desserts and backlava; demo; $35; 6-8 p.m.

May 28: Learn the correct way to use your knife and learn your classical cuts; $15; 6-8 p.m.

May 29: Guys Night Out! Learn rubs and marinades perfect for your next barbecue or game day; demo; $35; 6-8 p.m.

May 30: Date Night Greek Mediterranean Style. Summertime menu, featuring lamb, cucumber salad and more; $50; 6-8 p.m.
