Macarons have gone mobile! There's a new food truck serving up a variety of desserts around town. Named for owner Abbey Shae Kimball, you can find Huntington's latest sweet spot most Saturdays by Heritage Station as well as at a variety of festivals in coming weeks.
"I'm 22 years old, and I'm from Proctorville, Ohio, just across the river. I grew up going to school in Chesapeake, and then I went to college at Belmont University in Nashville. I actually majored in songwriting and the music business. I saw a lot of food trucks in Nashville, and we talked about them in my business classes. Baking was always kind of side project. Every time I would come back home and try new recipes out," Kimball explained. "I eventually got into French macarons because I knew they were extremely difficult to make. So I kind of wanted to take on that challenge and master it myself. It took a long time to get the hang of it. So I would start taking them to parties and giving them to friends and family. More people started asking me about it and where they can get them.
"I do a French style macaron. It's basically almond flour and confectioners sugar mixed into a whipped meringue with some type of filling. For that I use American buttercream, so it's a more of American style dessert," Kimball said. "The first I ever did was salted caramel. I have some variations such as a birthday cake macaron and cookies and cream."
Customers can enjoy macarons for $2 each, six macarons for $11, or a dozen for $20. The menu also has sandwich cookies and brownies for $3.
"My parents helped a lot. We started with what I think was a Dish TV truck in Pennsylvania. My mom is an art teacher and a graphic designer. I collaborated with her to come up with the design of the whole entire truck. We worked all summer putting the decals up, and she painted it. We used a 3D printer to print some of the designs on the truck," Kimball explained. "We opened it in Ohio in October, and we are fairly new to Huntington. Our first event in Huntington was Herdcon at Marshall University. We've been at Heritage Station a lot. We try to be there each Saturday we're not doing an event. We put on our social media everywhere we are each weekend. This Saturday we are going to be at the fifth annual Huntington Sustainability Fair from 10 a.m. until 4 p.m. at the Wild Ramp."
