Located in the former home of Los Mariachis, Monte Alban opened Friday, Sept. 28. The new restaurant is full of traditional Mexican variety dishes such as tacos, burritos and fajitas, as well as steak, chicken and seafood. The restaurant is co-owned by Antonio and Brienna Vargas.

"This space was on the market for about a year. We took over it in March. There was a lot of extensive repairs that needed to be done. That is why we moved a little slower to open. We put in a new plumbing, and lighting. We also built a brand new bar," Brienna Vargas explained. "We had a soft opening a couple of weeks ago. We are planning on doing a big grand opening within the next month or so. We are also waiting for our liquor license for the bar area."

Monte Alban offers a variety of combination dinners available for $7.50. From 11 a.m. until 2 p.m., customers can find lunch combinations priced at $6.99 and under.

"My husband worked at a number of different restaurants over the years. I've worked in nursing and day care. We've got a feel for working for other people and we decided to branch out. Everyone here is family," Brienna Vargas said. "The menu is based on items that in our experience has done really well. I did a study of a five mile radius and compared prices. I know when I want to dine out, I want to save some money and get a good portion for my buck."

The menu includes a choice of burritos including the Burrito Seafood priced at $10.25, a pork burrito for under $10, and the Burrito Popeye, priced at $10.99 and filled with chicken, mushroom, spinach, and topped with cheese sauce. There are also chimichangas such Chimichangas Ranchera ($9.99) filled with grilled steak, or chicken topped with nacho cheese and enchilada sauce.

"We have a Spaghetti Mexicano which is something found in different parts of Mexico. It was one of my husband's favorite dishes when he was still in Mexico. Our menu is divided into different sections. Whether someone is looking for chicken, steak, or seafood, they will be easy to find them," Brienna Vargas said. "Among my personal favorites are the Mediterranean Fajitas and the Tilapia Mexicana. We also have different lunch and dinner specials each week."

Monte Alban is located at 4341 U.S. 60 in Huntington in between Big Lots and Save-A-Lot. It is open from 11 a.m. until 10 p.m. Monday through Thursday and from 11 a.m. until 11 p.m. on Friday and Saturday. Sunday hours are from 11 a.m. until 9:30.
